Lemon Poppy Seed Muffins

Hey all. I want to share this delicious lemon poppy seed recipe with you.

If you're anything like me, I have a big sweet tooth. This recipe packs a zesty lemony punch, with an amazing texture and flavour combination that will leave you craving more.

Dry Ingredients:

2 C whole wheat flout

3/4 C coconut sugar

1 t baking powder

1/2 t salt

3 T poppy seeds

Wet Ingredients:

1.5 C almond or coconut milk

1/4 C unsweetened apple sauce

1/4 C coconut oil

2 T lemon zest

1/3 C lemon juice

1 t vanilla extract

Instructions

1. Preheat oven to 375F. Prepare your muffin tin. I use silicon muffin pans.

2. Zest lemons and juice them.

3. In a large bowl whisk together the dry ingredients. Pour the wet ingredients in and stir to combine. Don't over mix.

4. Pour the batter into muffin pan. Bake for 45-55 min.

5. Try not to eat them all at once ;)
